Everyone needs a good pancake recipe in their back pocket to pull out in times of need. Pancakes are easy and ready super quick and who doesn’t love a fluffy pancake with butter and syrup and your favorite toppings? I am always down for a stack of those sweet delicious things. And even being gluten free hasn’t stopped me from enjoying pancakes. So here is my fave recipe down below!
Ingredients:
* 1c gf flour
* 1/2c almond flour
* 3tbs sugar
* 2 tsp baking powder
* 1 tsp salt
* 1 1/2 tsp vanilla
* 2 eggs
*1 cup milk/alternative
* 3 tbs butter - melted
* Oil for pan for cooking I like coconut oil or butter
Optional add-ins or toppings:
Blueberries
Chocolate chips
Strawberries
Nuts
Whipped Cream
Directions:
Combine all ingredients into a mixing bowl and whisk together. Heat a griddle or skillet to medium high. Add butter or coconut oil into pan to prevent batter from sticking. Pour pancakes into desired sizes. Let cook on one side until the edges are formed and firm and the top is bubbly (About 1-2minutes). If you want to add blueberries or chocolate chips this is when I do it. Flip the pancake and continue cooking on the other side for another minute. Once browned on both sides remove from heat. Add butter and syrup and serve immediately. Extras can be frozen!
