Homemade Mayo

Nothing could be easier to make that your own homemade mayonnaise but if you had told me that a few years ago I would never have believed you! I didn't think that you could make mayo at home. It never even crossed my mind. So when I tell you that for that past 3 years I haven't bought mayo from the store its because this mayo is better that any mayo I have tried. And its a bonus because I can whip up a new batch in less than 5 minutes. So lets get right this recipe. Here’s what you’re going to need:

Ingredients:


* 1 cup of neutral flavored oil - I like avocado oil

* 1 egg

* juice of 1 lemon

* 1/2 tsp salt


Tools:

1 pint size mason jar


Directions:


Add all ingredients into mason jar. Place immersion blender into bottom of mason jar. Turn onto high and leave at the bottom of the jar for about 15-20 seconds then slowly raise the immersion blender through the oil to the top while leaving on high speed. You will see the oil and egg immulsify into a thick mayo. You may have to repeat this process a couple of times to make sure all the ingredients get mixed properly. Then give it a stir with a spoon to blend it all. Give it a taste to see if it needs more lemon juice or salt. That’s it. Perfect mayo every time. You can store it for up to a week in the fridge.
