Gluten Free Broccoli & Cheese Quiche

One of my all time favorite dishes for breakfast or dinner is a quiche. You can add anything you like inside from veggie to meats and cheeses. They are easy and versatile. The basics are a pie crust filled with veg, meat, cheese and eggs. Then baked to perfection for a delicious omelette-y, pie-ish, goodness with a flaky crust. You can make your own crust or use store bought. I used a store bought gluten free crust but like I said, it’s versatile, so go with what you have. Your cheese and dairy (non-dairy) options are endless here too. Again, VERSATILE. Here’s what you”ll need to make this recipe.

1 frozen pie crust

1 head of broccoli chopped into small pieces

8-12 eggs

1 c shredded cheese of your choice

1 medium onion diced

1/4 c milk/non-dairy milk

salt and pepper

1/4 tsp thyme

1/4 tsp rosemary

1/4 tsp garlic powder

2 tsp cooking oil of choice



Preheat oven to 400 degrees. Chop broccoli and blanche for 2 min in boiling water and then place into ice water to stop the cooking process. (This will keep them from getting mushy). Sautee‘ the onions in a small amount of oil, adding the thyme, rosemary and garlic to the pan. Add the broccoli and toss together. Add salt to broccoli and onion mixture about 1 tsp. Take off the heat and set aside.

Meanwhile, crack eggs into a mixing bowl and add S&P to taste, and milk. Stir together thoroughly. Place. 1/4 cup of shredded cheese into bottom of pie crust. Add broccoli and onion mixture into pie crust. Top with remaining cheese. Pour egg mixture into pie crust being sure not to overfill. Egg wash the edges of your pie crust. Place into oven and bake at 400 degree for 15 minutes and then turn down oven to 385 amd bake for additional 20-30 min or until center no longer jiggles and toothpick comes out clean. Top will be browned.
