Ground Emu Tacos


After being diagnosed with alpha gal syndrome I was desperate to find a way to make my tacos taste like tacos again! When I finally discovered emu meat I was so thankful that I found something that matched the texture and taste of beef so closely that I almost couldn’t tell the difference! So of course, tacos was the first thing I made! The recipe is super simple and it takes just a few spices that you probably already have in your pantry. I am using emu meat in this recipe but this could easily be substituted for your favorite ground meat instead.

Ingedients:

1 lb ground emu ( any ground meat will work though)

1 medium onion chopped

1-2 cloves garlic chopped

1 tsp ground paprika

1 tsp ground cumin

1 tsp ground chile powder

1 tsp salt

1 tsp pepper

1/2 tsp crushed red pepper

1 tbsp cooking oil (I use chicken Schmalz)


Directions:

Place oil into hot sautee pan. Then add ground meat and begin browning, after about 5-6 min add your chopped onion and garlic and spices so they can cook into the oil and add flavor to the meat. Continue cooking until meat is completely browned and cooked through. This shouldn’t take long. Take care not to over cook the emu meat as it can dry out because it has a low fat content. Serve immediately over nachos, tacos shells, rice, corn tortillas.



We like to garnish our tacos with fermented curtido, cowboy candy jalapeño, sour cream(dairy free alternative), cheese (dairy free alternative) and salsa. But feel free to use whatever you like to top your tacos!
